The end of the month is approaching, which means “Rum Month” will be coming to a close. This recipe is reminiscent of the Bay Breeze or Cape Codder, using coconut rum as the primary liquor instead of vodka. (Click here for the recipe used.)
Ingredients: 1 ½ oz. coconut rum, 2 oz. cranberry juice, 2 oz. pineapple juice
Directions: Put all ingredients into a shaker with ice. Shake and strain into a double old-fashioned glass with ice. Alternately, if you want to minimize dishwashing, put all ingredients directly into your glass, stir and add ice.
I am sort of feeling over the combination of coconut rum and pineapple juice (and orange juice). At this point, I feel like they are nearly indistinguishable from one another. And, I tend to skip over drink recipes with those couple or few ingredients. But, I gave this one a second glance because I do like Cape Codders. And, I wasn’t disappointed – this drink definitely stands apart from the other coconut and pineapple drinks. I wasn’t sure how the cranberry juice would go with the tropical flavor of the other ingredients, but the tartness blended well as a nice addition. This drink was refreshing and extremely easy to drink. Cheers!
